Ice Cream
Here’s what you’ll need:
1 Can Organic Coconut Milk (chilled in the refrigerator for at least 2 hours before)
2 Bananas, frozen
1 Cup Strawberries, frozen
Add in some Protein – Use a plant-based protein powder in vanilla or chocolate. Use 1/2 a scoop for starters, the key is not to make the ice cream chalky. I use www.mybodysymphony.com
**Water or chilled Coconut Milk as needed to create smoothness**

For this recipe, it is best to use a high-speed blender or, better yet, a food processor. Place everything in the food processor or blender and blend – use the water or in-chilled coconut milk if the mixture starts to freeze up or doesn’t want to move within the blades (if not there is no need to add it in).
Do not be confined to this recipe, feel free to use other fruit as well and you can add in cinnamon, coconut flakes, or vanilla to spruce up the flavors. And if you need a bit more sweetness add a couple of frozen dates to the mixture.
Serve immediately – if you have extra you can freeze it, although it may not be as smooth the second time. I like to place the leftovers in an ice cube tray with toothpicks in it so that I can pull them out as a frozen fruit pop at a later date.
