Coconut Protein Pancakes
Here’s what you’ll need
4 Eggs
1 Cup Coconut or Almond Milk
2 Tablespoons Coconut Oil (for the batter, then use extra to grease the skillet)
2 Tablespoons Honey or Maple Syrup
1/3 Cup Coconut Flour
1 teaspoon Cinnamon
1 teaspoon Vanilla
1/2 teaspoon Baking Powder
1 scoop of vanilla or coconut protein powder (I prefer to use the coconut protein powder from Superfoods Mix)
Make it
In a bowl whisk together all of the liquid ingredients, then add the dry ingredients. You want the batter to be smooth so depending on what type of protein powder you use you may have to add a bit more milk. Whisk all until smooth
Add some coconut oil to the skillet over medium heat and spoon the mixture onto the skillet. Cook for about 3 minutes or once bubbles start to form and then flip and cook for another minute or so. You will end up making approx 15 pancakes and you can top them with either maple syrup or, my all-time favorite, pureed berries.
