Here’s what you’ll need
Basil Simple Syrup:
- ¼ cup fresh basil leaves, finely chopped
- ¼ cup Raw Honey
- ¼ cup water
Watermelon Basil Mocktail:
- 1 cup seedless watermelon chunks
- 1 oz lime juice, freshly squeezed
- ½ oz basil simple syrup
- 2 oz Pellegrino or Perrier
Make it:
Basil Simple Syrup:
- Add the chopped basil, honey and water to a saucepan. Heat over medium heat, stirring occasionally. Bring to a gentle simmer, but don’t let the syrup boil. Continue to heat for 3 – 5 minutes, until the honey has fully dissolved.
- Remove the saucepan from the stove. Let cool to room temperature.
Agua Fresca Basil Mocktail:
- Add the watermelon chunks to a high-speed blender (remove seeds beforehand) and blend until smooth.
- Add lime juice and basil simple syrup (you control the sweetness, add this in slowly until you like the flavor) for a quick blend. Then add to a glass of ice and mix with a spoon.
- Another option for better ambiance: Place in a cocktail shaker filled with ice. Shake well for 15 seconds, and strain into a glass filled with ice.
- Top with sparkling water and serve immediately. Add a few basil leaves to garnish.
