Baby Bok Choy and Quinoa Power Meal
Here’s what you’ll need:
Cooked Quinoa
1 Red Onion, chopped
2 Cloves of Garlic, finely chopped
1/4 Cup Pine Nuts
1 Red Pepper, chopped
10 Cherry Tomatoes, chopped
4 Baby Bok Choy, whole or cut in half
Celtic Sea Salt to taste
Make it
Start off by sautéing your onions and garlic, once the onions are a bit glassy add in your pine nuts and bok choy, and allow to sauté until bright green. Next, add in your red pepper and Celtic sea salt, cook for about 5 minutes. Add in the tomatoes and cooked quinoa and sauté for a few more minutes and serve!
