Cauliflower Tabbouleh
Here’s what you’ll need
1 Large Cauliflower
1 Cup Fresh Parsley
1 1/2 Cups Cherry Tomatoes, halved
1/2 Cup Cilantro
1/4 Cup Fresh Mint
1 Medium Cucumber, chopped
1 Large Garlic Clove, finely chopped
1/2 Cup Raw Almonds, chopped
1/2 Cup Lemon Juice
Extra Virgin Olive Oil to taste
Celtic Sea Salt to taste
Optional: For added protein add in hemp seeds and garbanzo beans
Make it
Chop cauliflower florets and place them into a food processor – chop until they reach a rice-like consistency. Place into a large bowl and combine the rest of the ingredients. Mix well and serve.
