Mahi Mahi Tacos
Here’s what you’ll need
3 Tablespoons Fresh Lime Juice
1 Jalapeño, thinly sliced
1/2 Small Red Onion, finely chopped
1/4 Cup Cabbage, finely chopped
1/2 Cup Pineapple, finely chopped
4 Medium Tomatillos (those green ones with the skins)
1 1/2 Lbs. of Fresh/Wild Mahi Mahi (some call it dolphin, but it is not Flipper ;))
3/4 Cup Chopped Cilantro
Celtic Sea Salt and Pepper to Taste
Ezekiel 4:9 Sprouted Grain Tortilla
Make it
In a bowl combine the lime juice, onion, jalapeño, cabbage, pineapple, and salt and pepper to taste
As for the Tomatillos, you have 2 choices:
1. Grill them – remove the husk, cut in half and place on the grill until slightly charred. 2-3 minutes per side.
2. Bake them – cut them in half and bake at 350 for about 5-10 minutes or until soft.
**Chop the Tomatillos and mix in with the Pineapple mixture
As for the Mahi Mahi, again I give you choices:
First season the Mahi Mahi with salt and pepper.
1. Grill for 2-5 minutes per side or until fully opaque.
2. Bake at 350 for 5-10 minutes turning it over once. Make sure it is fully cooked and….
Serve with the Pineapple mixture on an Ezekiel Wrap and garnish with Cilantro.
