Arugula and Mahi Mahi Salad

Salad Ingredients

  • 4 cups baby arugula
  • 1-pint cherry tomatoes, quartered
  • 3 cups yellow squash noodles (with spiralizer)

Instructions

  • Toss all together in a large bowl.
  • If you don’t have a spiralizer, cut the squash into matchsticks.

Mahi Mahi Ingredients

  • 2 Mahi Mahi Filets
  • 1 tablespoon of extra-virgin olive oil
  • ¼ teaspoon Celtic sea salt
  • ¼ teaspoon black pepper

Instructions

  • Brush the fillets with olive oil and season with salt and pepper.
  • In a medium skillet, coat the bottom with olive oil and cook the fish with medium heat.
  • Cook 4-5 minutes per side

 

Dressing Ingredients:

  • 1 cloves garlic
  • 1 avocado
  • 2 tablespoons hemp seeds
  • 2 Tablespoons Honey
  • 2 tablespoons water
  • ½ tablespoons lemon juice
  • 6 leaves of fresh basil

Instructions

  • With the use of a food processor, chop garlic.
  • Stop the food processor and add avocados, water, honey, salt, and pepper. Process until smooth.
  • Add basil and pulse until basil is incorporated and finely chopped.
  • Pour dressing over salad and toss to coat.
