Oatmeal Mulberry Cookies
Here’s what you’ll need
4 1/2 Cups Old Fashioned Oats
1/4 Cup Adita’s Nut Mix
2 teaspoons Baking Powder
1/2 teaspoon Cinnamon
1 Egg
1 teaspoon Celtic Sea Salt
1 1/2 Cup Dried Mulberries
1 Cup Coconut Oil
1 Cup Sweet Potato, cooked and mashed
1/2 Cup Maple Syrup
2 teaspoons Vanilla
Make it
Pre-heat oven to 350 degrees
Add half of the oats and all of the rest of the ingredients into a food processor and blend until combined. Transfer the mixture into a large bowl and add in the remaining oats and stir. Flatten one-inch-sized balls onto a cookie sheet.
Bake until lightly browned, approx. 15 minutes. Let cool and serve. Makes about 24 cookies
