Superfood Macaroons
Here’s what you’ll need
- 2 cups Organic dried, unsweetened shredded coconut
- 1/2 cup Organic almonds, processed into a coarse meal
- or organic pumpkin seeds
- 1/2 cup Organic dried goji berries, processed to fine bits
- 1/2 cup Manuka honey
- 1/4 cup Organic cold-pressed un-refined coconut oil
- 1 teaspoon Organic almond extract*
Make it
- Place almonds in a food processor and process until a coarse meal texture is achieved. (Pumpkin seeds work best if a child has parasites.) Add the rest of the ingredients. Process until the mixture starts to hold together.
- Use a tablespoon or a melon ball maker to scoop the mixture out and press it into a ball. Roll the ball onto the shredded coconut, place it on wax paper on a cookie sheet, and freeze for about an hour or until fully set.
- From here, transfer the mixture into an airtight container and store it in the refrigerator for up to 2 weeks. I like to make extra, so I also store some in the freezer as a backup.
