Veggie Scramble
Here’s What You’ll Need
4 pasture-fed eggs
½ red onion
½ avocado
3 cups (90g) spinach
½ red bell pepper
¼ cup (12g) coriander leaf
2 cloves garlic
1 large tomato
Optional: 2 tbsp. feta cheese
Ground Spices:
¾ tsp. ground turmeric ¼ tsp. Celtic sea salt
½ tsp. onion powder
¼ tsp. Ground cumin pinch of black pepper
How To Make It
Chop the red onion, coriander, red bell pepper, garlic, and spinach and place into a bowl.
Scramble the eggs in a preheated, lightly greased frying pan. Cook on medium heat, then add the ground spices.
Add the vegetables to the pan and sauté together for 5-8 minutes until the vegetables soften and the spinach wilted.
Divide between 2 plates and serve with a sliced tomato and avocado.
Tips:
• Replace sliced tomato with a slice of sprouted grain toast if preferred.
• Nutrition per serving info is with sliced tomato.
