Coconut Chia Pudding

**Side Note – this is a great recipe to make extra for another day or even for a snack. Each chia pudding cup can be stored in airtight containers, in the refrigerator, for up to 4 days.
Ingredients
- ½ cup chia seeds
- 1 cup coconut or cashew milk
- Cinnamon to taste
- ½ teaspoon vanilla extract
- 1 teaspoon honey
- 1 teaspoon shredded coconut
- 2 tablespoons chopped pecans or walnuts
- 1 teaspoon of cacao nibs
Instructions
- In a medium bowl combine the chia seeds, milk, cinnamon, vanilla, and honey.
- Transfer into 2 single-serving containers.
- Refrigerate overnight or for 2 hours.
- Top with shredded coconut, nuts, and cacao nibs, and serve
