Pumpkin Cilantro Stew
Here’s What You’ll Need
- 1 teaspoon Olive Oil
- 1 large Onion – chopped
- 2 large cloves Garlic – minced
- 1 medium Pumpkin – peeled, seeded, cut in 1-inch cubes
- 4 stalks of Celery – cut into 1-inch pieces
- 4 cups of Bone Broth
- 1/2 teaspoon Celtic Sea Salt
- 1 cup cooked Garbanzos
- 1/4 cup Cilantro – chopped
- 1/2 medium Red Pepper – chopped
- Aim for ORGANIC with all ingredients.
Make It
- Preheat a large pot with olive oil over medium. Add chopped onion and garlic and sauté for about 3 minutes.
- Stir in bone broth, pumpkin, celery, peppers, and salt. Bring to a boil, cover and cook with medium heat for 20-30 minutes (or until pumpkin is soft).
- Add in additional bone broth or water as needed.
- Add in garbanzos and cilantro and stir for another 10 minutes.
- Serve and Enjoy
