Cooking a whole chicken can make meal prep so much easier during the week.  You can use this for a variety of meals from dinner, to a salad, and even a soup.

Ingredients:

1 medium whole chicken – Remove the giblets and marinate the chicken with the following:

3 tablespoons of extra-virgin olive oil

1 teaspoon Celtic sea salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon oregano

**Depending on the size of the chicken you, can play around and add more ingredients as needed.

Instructions

Pre-heat oven to 350 degrees.  Spread the olive oil all over the chicken.  Next, mix all the dry seasonings together and spread over the chicken. Place the chicken on a roasting pan and cover, bake for 1 hour and 15 minutes (or internal temperature of 180 degrees).  Allow sitting for 30-minutes once cooked and then use for any recipe.  Will keep fresh in the refrigerator for 4 days.
