Avocado Power Snack
Here’s what you’ll need
1 Large Collard Green Leaf
1/2 Avocado
3 Tbsp Hemp Hummus
2 Slices of Tomato or better yet 1 tsp of Sundried Tomatoes
½ Cup Organic Spinach Leaves
Extra Virgin Olive Oil to taste
Make it
Place Collard Green Leaf flat on a plate face down and trip the stalk long ways to make it as flat as the leaf. Spread Hummus all over the leaf, and layer in the spinach, Avocado, and tomatoes. Drizzle with Olive oil and roll tightly, secure with toothpicks, and cut in half to serve.
