Quinoa Veggie Blend
Here’s a full meal in minutes. Enjoy a quick blend of quinoa and vegetables to provide you with amazing nutrients and protein.
Here’s what you will need:
1 Cup Cooked Quinoa
2 Cloves Garlic Finely Chopped
1/4 Cup Pine Nuts
1 1/2 Cups Chopped Broccoli or Broccolini
1 Red Pepper, chopped
1 Cup White Beans, chopped
1 Large Tomato, chopped
Water
Make it
In a medium sauté pan heat the olive oil and garlic at medium heat. Once the garlic starts to brown add in the broccoli. Throw in a dash of water and allow the broccoli to turn a bright green, then add in the white beans and red peppers, and let this cook for about five minutes. Finally, add in the tomatoes and season with a bit of salt to taste. Serve over a bed of quinoa and enjoy!
