South of the Boarder Chicken Stew

Ingredients

  • 2 boneless chicken breasts
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 ½ cup chicken bone broth
  • ½ cup salsa
  • 2 cloves garlic, minced
  • ¼ small onion, chopped
  • ½ cup jarred roasted red pepper, diced
  • ¼ cup loosely packed fresh cilantro, finely chopped

Instructions

  • TRIM chicken breasts and cut them into strips.
  • In a small bowl, combine cumin, salt, pepper, paprika, broth, salsa, and 1 clove of garlic, to create a broth mixture.
  • In a medium saucepan on medium heat, sauté the other clove of garlic, with the onions for 2 minutes. Add in chicken and sauté for 5 minutes on each side. Next, add in diced red pepper, and combine the broth mixture over the chicken.
  • Cover, and cook for 15-20 minutes or until chicken is cooked and can be pulled apart.
