Tomato Basil Egg Bake
Here’s what you’ll need
2 Eggs
6 Leaves of Fresh Basil
1 Garlic Clove, chopped
2 Tablespoons Onion, chopped
Celtic Sea Salt and Pepper to Taste
Quick Marinara:
1 Tomato
1 Teaspoon Oregano
1 Carrot
3 Broccoli Tops (the tree part)
1 Garlic Clove
Celtic Sea Salt to Taste
Make it
Start with your Quick Marinara, take all of the ingredients and place them in a food processor or blender, and blend. Be sure to taste it to make sure it has the right flavor for your needs. (depending on the size of your tomatoes this may be enough for 1 or 2 people)
Next, in a medium-sized sauté pan, sauté the chopped garlic and onion until soft. Add in the marinara and simmer for 2- 5 minutes. Season with salt and pepper and add in the Basil leaves, torn just a bit.
Pour the above mixture into a small baking dish and crack 2 eggs inside. Bake at 350 for 10 minutes or until eggs are set.
Serve and garnish with fresh basil.
