Here’s What You’ll Need:

 

  • 1 medium head cauliflower
  • 1 cup chopped cucumber
  • 5 chopped cherry tomatoes
  • 4 scallions, thinly sliced
  • ½ cup fresh lemon juice
  • zest from 1 lemon
  • 2 tablespoons of olive oil
  • 1 cup cooked garbanzos
  • Celtic sea salt and black pepper to taste

 

Make It:

 

  • Cut the cauliflower florets from the stem. Pulse in a food processor until the cauliflower is the size of pieces of rice.
  • Stir in the chopped cucumber, cherry tomatoes, and scallions.
  • Whisk together lemon juice, lemon zest, and olive oil. Pour the mixture over the cauliflower and stir to combine.
  • Top salt and pepper to taste.

Tip: You could also add in some sliced chicken for added protein.
