Cauliflower Rice Salad
Here’s What You’ll Need:
- 1 medium head cauliflower
- 1 cup chopped cucumber
- 5 chopped cherry tomatoes
- 4 scallions, thinly sliced
- ½ cup fresh lemon juice
- zest from 1 lemon
- 2 tablespoons of olive oil
- 1 cup cooked garbanzos
- Celtic sea salt and black pepper to taste
Make It:
- Cut the cauliflower florets from the stem. Pulse in a food processor until the cauliflower is the size of pieces of rice.
- Stir in the chopped cucumber, cherry tomatoes, and scallions.
- Whisk together lemon juice, lemon zest, and olive oil. Pour the mixture over the cauliflower and stir to combine.
- Top salt and pepper to taste.
Tip: You could also add in some sliced chicken for added protein.
