SuperFood Encrusted Mahi Mahi
Here’s what you’ll need
2 Mahi-Mahi Fillets
*Breading Mix – See below
2 Eggs, beaten
Celtic Sea Salt or Himalayan Pink Salt and Pepper to taste
Make it
Season mahi-mahi on both sides with a pinch of salt and pepper. Place breading into a bowl. In a separate bowl, mix the eggs. Dip the mahi-mahi in the eggs, then finish by crusting the fish in the breading mix, making sure to coat completely.
Heat a medium pan over medium heat. Add 1 tsp. olive oil and crusted fillets into the pan. Cook on each side for 5 minutes or until golden and fish has reached a minimum internal temperature of 145 degrees, then remove to a plate.
Breading Mix:
With the use of a Food Processor, place in 1 cup of raw/uncooked quinoa and blend to a powder, add in 1/2 cup of chia seeds, 1 cup of raw oats, 1/2 cup unsweetened shredded coconut, and blend. Add in a teaspoon of Himalayan sea salt and mix again. You can taste the raw mix to be sure it has enough salt and flavor. Many times I will also add in other seasoning to the mix such as garlic, rosemary, etc. Get creative. You can easily make extra, this stores great in an airtight container in the refrigerator for up to a month. See the detailed version of this recipe HERE
