Arugula and Mahi Mahi Salad

- 4 cups baby arugula
- 1-pint cherry tomatoes, quartered
- 3 cups yellow squash noodles (with spiralizer)
Instructions
- Toss all together in a large bowl.
- If you don’t have a spiralizer, cut the squash into matchsticks.
Mahi Mahi Ingredients
- 2 Mahi Mahi Filets
- 1 tablespoon of extra-virgin olive oil
- ¼ teaspoon Celtic sea salt
- ¼ teaspoon black pepper
Instructions
- Brush the fillets with olive oil and season with salt and pepper.
- In a medium skillet, coat the bottom with olive oil and cook the fish with medium heat.
- Cook 4-5 minutes per side
Dressing Ingredients:
- 1 cloves garlic
- 1 avocado
- 2 tablespoons hemp seeds
- 2 Tablespoons Honey
- 2 tablespoons water
- ½ tablespoons lemon juice
- 6 leaves of fresh basil
Instructions
- With the use of a food processor, chop garlic.
- Stop the food processor and add avocados, water, honey, salt, and pepper. Process until smooth.
- Add basil and pulse until basil is incorporated and finely chopped.
- Pour dressing over salad and toss to coat.
