Here’s What You’ll Need:

 

  • ¼ cup sunflower seeds
  • ¼ cup walnuts
  • ¼ cup pumpkin seeds
  • 2 tablespoons extra-virgin olive oil
  • 1 cup finely diced carrots (in a food processor)
  • 3 stalks finely diced celery
  • ½ cup scallions, thinly sliced
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon cinnamon
  • 6 romaine salad leaves

Make It:

  • Place nuts and seeds in a food processor. Process until finely chopped. Add in the olive oil and mix.
  • In a large bowl, combine the nut mixture with the vegetables and spices. Mix Well.
  • Set 3 leaves per plate, spoon the mixture into the leaves, and serve.
