South of the Boarder Chicken Stew
Ingredients
- 2 boneless chicken breasts
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 1 ½ cup chicken bone broth
- ½ cup salsa
- 2 cloves garlic, minced
- ¼ small onion, chopped
- ½ cup jarred roasted red pepper, diced
- ¼ cup loosely packed fresh cilantro, finely chopped
Instructions
- TRIM chicken breasts and cut them into strips.
- In a small bowl, combine cumin, salt, pepper, paprika, broth, salsa, and 1 clove of garlic, to create a broth mixture.
- In a medium saucepan on medium heat, sauté the other clove of garlic, with the onions for 2 minutes. Add in chicken and sauté for 5 minutes on each side. Next, add in diced red pepper, and combine the broth mixture over the chicken.
- Cover, and cook for 15-20 minutes or until chicken is cooked and can be pulled apart.
