Nut Pate Salad Leaf CupsAditaLang
- ¼ cup raw sunflower seeds
- ¼ cup raw walnuts
- ¼ cup raw pumpkin seeds
- 2 tablespoons extra-virgin olive oil
- 1 cup finely diced carrots (in the food processor)
- 3 stalks of finely diced celery
- ½ cup scallions, thinly sliced
- 1 teaspoon fresh ginger, grated
- ½ teaspoon turmeric
- ½ teaspoon ground cumin
- ½ teaspoon cinnamon
- 6 romaine salad leaves
- Place nuts and seeds in the food processor. Process until finely chopped.
- Combine the nut mixture with the vegetables and spices.
- Set 3 leaves per plate and spoon the mixture into the leaves and serve.
